Manual harvest in several passes, micro vinification in open deposits with one hundred percent whole bunches. Followed by a two week post fermentation maceration. Pressing extraction at 50%, 'elevage' in barrels of second andthird year use of Taransaud & Franois Freres cooperages. The wine is only racked once and for bottling.
